POMEGRANATE CHICKPEA MOZZARELLA SALAD

After a long morning of shopping, I came home starving wanting to eat something filling yet healthy. I opened my fridge and didn't see much, so had to create something original. It turned out to be the most filling and flavorful salad!



What you'll need:

Romaine lettuce
Pomegranate seeds
Mozzarella sticks
Chickpeas
Olive oil
Balsamic vinegar
Salt and pepper


Cut up the Romain lettuce in a bowl, put in however much you think you will need. Take a pomegranate, roll in on your counter, cut off the tip, and peel it off like an orange. The seeds should come out easily. Put them all in for some sweet and juicy flavor. Add in half a can of chickpeas. Cut up the mozzarella sticks (any cheese sticks are fine). Add olive oil, balsamic vinegar, salt and pepper. 

Mix well and enjoy this healthy filling easy to make lunch!
